Healthy Recipe: Cucumber Nachos

Eating healthy can be a serious challenge, right?  Well, there are a few hacks you can use to make it easier. For example, when you cook with your kids (case in point: Cucumber Nachos!), they're almost guaranteed to like and eat whatever it is.  I use this trick to get my toddler to eat almost anything, especially when I try new healthy recipes. cucumber nachos recipe

For example, we recently made a new favorite lunch recipe of ours... Cucumber Nachos.  We also recorded it live on Facebook, so I wanted to share it with you today.

In case you can't watch the video (or prefer not to) here's the "recipe" for our Cucumber Nachos.

Cucumber Nachos

1 Sliced Cucumber per person

Taco Seasoned Ground Beef

Lettuce, tomato, olives, cheese, avocado, beans, etc.  All your favorite nacho toppings!


Layer the cucumbers on the plate, then add the toppings just like you would your favorite nachos.  Eat with your fingers.  :)


Easy, right?  Sometimes easy is best when it comes to crazy times with young kids- and also to clean eating recipes.  Why overcomplicate it?
